APPETIZERS

Artichoke Dip

  • 1 can                Artichoke Hearts
  • 3/4 cup              Mayonnaise
  • 1 cup                Parmesan Cheese
  • 1/2 tspn             Garlic Powder

Drain artichoke hearts and break into small pieces.  Mix with other ingredients.  Bake for 20 to 30 minutes at 350 degrees, or until brown.  Serve with crackers or tortilla chips.  Serves 4.

Mexican Cheese Roll-Up

    • 1 8 oz. pkg        Cream Cheese (softened)
    • 1/3 cup              Mayonnaise
    • 1 4.25 oz. can  Chopped Olives, drained
    • 6                           Flour tortillas (large, soft)

Mix Mayonnaise and cream cheese; then add other items. Spread on tortillas leaving 1/2 inch border and roll up.  Refrigerate until firm.  Can serve with salsa.

MAIN DISHES

RIBS

Ribs (lots of them)
1/2 cup Mayo
1/2 cup Mustard
1/2 cup Ketchup
1 jar of cocktail sauce
1/2 tsp basil
1/2 tsp Italian seasoning
garlic as much as you want…

I used the crock pot but you can use this on the grill (taste way better that way)… Here is a picture of the before cooked…

SPANISH CHICKEN – makes a large casserole

10 cooked and diced chicken tenders

1 can cream of chicken soup

1 can cream of mushroom soup

large can of ortega chili salsa or any salsa

1 – 2 regular can of sliced black olives

3 pkgs. corn tortillas torn or cut into pieces

shredded mexican or cheddar cheese

Seasonings – seasoned salt, pepper, ( and any other spice as desired cumin, mexican oregano)

In bowl mix, soups, salsa and chicken and olives- Add seasonings

Spray bottom of casserole dish with pam and spread a small layer of soup mixture on bottom- then a  layer of the tortillas-  then a layer of chicken soup mixture, then a layer of cheese and repeat a few more times

Best made day before- cover and refrigerate overnight

Bake 350* for 1 hour- let set

Garnish with sour cream and chopped cilantro

  1. Here is Moms chocolate Brownies recipe

    You can start with making any box of your favorite brownie mix but she made them by scratch
    2 sq. chocolate (doesnt say which type so maybe baking choc.)
    1/4 cup margarine
    1 cup sugar
    1/2 cup flour
    1/4 tsp. salt
    Melt chocolate and margarine- Cool slightly- Add rest of the ingredients- stir until blended. Bake in a greased 8 x 8 pan- cool then frost.
    The added touch is the frosting whether you make a box mix or the recipe above
    Frosting
    2/3 cup brown sugar
    2 Tbs. Cream
    3 Tbs. Butter
    Small bag chocolate chips
    Combine all the above and bring to a slow boil and cook for 1 minute.
    Add 2/3 cup milk and chocolate chips
    Beat or stir until spreadable and frost

    Yummy!!!!
